Sweet-Potato Soup

We had this at the Thasnksgiving Dinner in SLC with Mike Rosa Ann Jason Doe Mc D Mom and Dad. It was a favorite and lots of requests were made for teh recipe. I have found it finally...
Yield 6 to 8 servings
takes 15 minutes of prep
total time with cooking 30 minutes
2 tablespoons unsalted butter
1 medium onion
3 pounds sweet potato, peeled and cut into two inch pieces
4-1/2 cups chicken broth more if needed to thin
1 chipote pepper in adobo plus more to taste
1/2 cup crem fraiche
2 tablespoons freshly squeezed lime juice.
in a large stock pot heat the butter over medium heat.
add the onion and cover and sweat for 5 minutes
add the sweet potatos adn chicken stock; just to cover teh potatos
raise the heat to medium high and bring to a boil
reduce the heat to low and allow to simmer, covered, until the potatos are completely tender, about 25 minutes.
stir in the chipolte pepper. (a roasted pepper will do)
using a food processor or standing blender, puree the soup.
return teh soup to the pot and stir in the crem fraiche and lime juice; thin with more chicken stock if necessary.
season to taste with salt and more lime juice if needed to brighten the flavor
can save for 5 days in teh fridge
