I am going to whip up some Indiana Ethel Chile Verde, and I would like to serve with fresh homemade flour tortillas. How does that recipe go again? There are a number of fairly simple sounding recipes online, but Ada said she had a good one.

Ingredients for 6 tortillas

1 cup wheat
1 cup white
1/2 tsp baking powder
1/2 tsp salt
mix dry stuff
1 T oil
drizzle on to dry stuff and mix
3/4 cup warm water

knead until well mixed, it will be much wetter than bread dough
divide into 6 pieces and roll between palms into balls

using as little flour as possible, roll out into 7-8 inch diameter disks.
you can cook as you go
heat a large fry pan (we use cast iron) or a griddle, make sure it is big enough so you don't burn you hands as you flip the tortillas
should be smoking, wipe very lightly with oil, place tortilla in pan and it will blister in about 30 sec, flip when the side is browning, same to the other side. If you have too much flour on the tortilla, it will burn and you'll have to clean that off between cooking
Put the tortilla in a paper bag as you cook them, this keeps them flexible. Enjoy!
