Chocolate banana avocado hippy pie

Sounds weird i know but, for something totally organic and in the process of which no animals were harmed or even mildly alarmed, its pretty damn good. Recipe from our friend Bee. We havent tried the mango version yet.

Chocolate Banana Pie: makes 1 glorious pie

Base:
1 cup pecans
1 cup walnuts
1 1/2 cups dates
Pinch of Salt
1/2 tsp vanilla, if you want

Chocolate Cream:
1 1/2 avocados
4 bananas (2 to slice)
1/3 cup maple syrup
Pinch salt
1/2 t cinnamon
1/4 cup cocoa/cacao
2 Tb mesquite (optional)
2 Tb melted coconut oil

Whipped Cream:
1 can chilled full fat coconut milk
3 Tb raw powdered sugar
Seeds from 1/2 vanilla bean

To make the base, pulse the nuts in food processor until they're the size of crumbs. Add dates and pulse until it lumps together. Feel free to add cinnamon, salt, vanilla here. Press into your favorite pie dish and put in the fridge (I line the dish with baking/greaseproof paper to make things easier). Note that walnuts and pecans release their oils if overblended - I substituted half the walnuts with hazelnuts.

To make the chocolate cream, blend/process all ingredients until silky smooth. I could just eat this. Now slice 1-2 bananas and put them on the bottom of the base. Spoon the chocolate cream onto the bananas and set in the fridge again (it will need at least 4 hours or 1 hour in the freezer and one in the fridge). When it's ready to serve, if you want you can layer more banana slices on top.

Serve with coconut yogurt or whipped cream (in the latter case it'd no longer be a "hippy" pie, just a happy one)

For the Mango version of the cream:

1 1/2 cups raw cashew nuts (soaked for 4 hours)
3 tbsp lime juice
1 cup of fresh or defrosted mango (or more - you could use passion fruit or any other fruit I guess)
1 tsp vanilla extract
1/2 cup coconut oil
pinch of salt
1/4 cup maple syrup

Blend all the ingredients together (add a very small amount of water if it's too thick), spoon onto the base and set in the fridge.

With this version substitute the cream with an amazing syrup: you'll need to prepare it at least the night before:

1/2 cup of maple syrup
zest of 1 orange
1 vanilla bean

Mix all ingredients and allow to infuse.
