This is the premier potatoe salad of all time!
Judy often triples this recipe for a large group.
21/2 Cups cooked potatoes, diced
While potatoes are still warm, put in the pot
1 Tbs sugar
1 Tbs vinegar
1 1/2 tsp salt
then
1/2 Cup diced onion
1/2 Cup sweet pickle, diced, or sweet pickle relish
1/2 Cup celery, diced
3/4 Cups mayonaise (more or less, depnding
on how you like it!)
Just before serving, add
2 hard cooked eggs, coarsely diced.
Garnish with fresh parsely.
