pipp fritters

At Stradbroke Island we didn't have much luck fishing, I just got one small shark. But we did get a really good feed of pipis and made fritters one night.

At low tide you just wiggle your feet and then if you feel them just grab 'em! They have to sit in a bucket of seawater for a day at least to let them get rid of sand in the shell.

You boil the pipis until they pop open, then chop up the meat

The final step is to put the smashed pipis into some tempura batter and fry them up like pancakes. serve with sweet chili sauce or good old Tabasco
