2 Cups shredded zucchini
3/4 Cup biscuit mix (Bisquick)
1/4 Cup (3 oz) shredded sharp chedder cheese
1 Small chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 rubbed sage or basil (or whatever herbs you like!)
2 Large eggs, lightly beaten (I used three and it was fine, could use four?)
1/4 Cup vegetable oil
Stir together all ingredients.
Pour into greased 9 inch pie plate.
Bake at 350F for 45 minutes, cool 10 minutes
You can also put this in well greased cupcake tins and get 12 mini-quiches.
